材料
鯛魚肉(吳郭魚肉)10兩、蔥4 兩、薑1片、紅辣椒2枝。
調味料
鹽11/2茶匙、米酒1/2茶匙、 胡椒粉1/2茶匙、雞蛋1個、水1杯、太白粉3湯匙。

作法
(1)蔥斜切段、取蔥白,薑、紅辣 椒切菱形。
(2)魚肉切1公分厚、2公分寬、4公分長之片狀,用鹽抓過、加蛋白半個和太白粉少許拌勻。
(3)用塭油將魚片泡熟。
(4)薑蔥段炒軟,放下薑、紅辣椒片,加水半杯、鹽、米酒、胡椒粉調味,再放入魚片、勾薄芡、滴入香 油。(也可用寧波鹹菜來炒)
